most protein-cookie macros are vibes. a "30g protein cookie" turns out to be measured per 100g, not per cookie, and the cookies are 35g each. or the protein is calculated by reading the protein-powder label and multiplying. neither is honest.
the brown butter cookie, ingredient-by-ingredient
here's the recipe ratio i actually use, scaled to a six-pack (so the math is per six cookies):
• 200g brown butter (from 240g unsalted butter, browned to ~75% mass) → 1,608 cal, 0g protein • 360g full-fat greek yogurt → 360 cal, 36g protein • 4 large eggs → 280 cal, 24g protein • 80g micellar casein → 304 cal, 64g protein • 320g all-purpose flour → 1,168 cal, 32g protein, 12g fiber • 180g brown sugar → 720 cal • 60g granulated sugar → 240 cal • 8g vanilla, 6g salt, 4g baking soda → trace cal
total batch (6 cookies): ~5,002 cal, ~156g protein, ~12g fiber. per cookie: 240 cal, 22g protein, 2g fiber, 18g carbs, 12g fat.
how this lines up with what we publish
the macros on the bakery page match what i just calculated, rounded to the nearest gram. not because i'm trying to flatter the recipe — because i recalculate every batch when an ingredient supplier changes, and update the product card.
that's the whole methodology. weighed ingredients. usda food database lookup per line. divide by the batch yield. publish it.
how to verify
next time you order a six-pack, weigh one. it should be ~85g (with normal baking variance ±3g). if you're wildly off, email me — i'd rather hear about a calibration drift than have customers eat through it.
