why we stopped using protein powder in our breads

the path to tandoco's bananabolic bread went through three failed protein-powder formulations. i'm writing this so the next baker who's trying to make high-protein bread doesn't waste the same six months.

failure 1: whey isolate

whey isolate baked at 350°F is rubbery. you already know this if you've eaten a "high-protein bagel" from a brand. the whey denatures, tightens, and competes with gluten for water. the bread comes out dense, springy in the wrong way, and feels like erasing pencil with your teeth.

rejected after 11 test loaves.

failure 2: plant blend (pea + rice)

plant blends solve the texture problem (kind of) by being less reactive. but they introduce a vegetal aftertaste that even a strong sourdough starter couldn't mask. the loaf was "fine." nobody craves "fine" bread.

rejected after 8 test loaves.

failure 3: milk protein concentrate

MPC is closer to greek yogurt's protein profile and the texture is decent. but it's expensive at scale and harder to source consistently in minneapolis from local suppliers. if we'd gone with it, you'd be paying $14 for a loaf, not $9.

rejected on supply-chain grounds.

what we use instead

the answer was to skip the powder. the current bananabolic recipe lands at 16g protein per slice using just casein, full-fat greek yogurt, eggs, and a small percentage of vital wheat gluten to support structure. it tastes like banana bread because it IS banana bread — the protein is in the fat-and-protein matrix from yogurt and eggs, not in a powder taped onto the side.

you can buy a loaf through the bakery or order it as a meal-prep add-on through the store. it freezes well — slice first, microwave 30 seconds from frozen.
