pan straight in, lid on.

bag off, pan into the oven with the foil lid still on, set on a sheet pan. same moment, pull both frosting sleeves out onto the counter so they soften while it bakes.

lid off at 7 minutes.

then 4 to 6 minutes more. this is where they finish and take color, so start looking at 4. baking two pans, keep them apart and add about 2 minutes.

out, then wait 5.

the only wait on the card, and the one that makes or breaks them. don't ice them yet.

sleeve one hot, sleeve two after.

sleeve 1 goes on while they're almost too hot to touch so it sinks into the middle. once it stops looking wet, pipe sleeve 2 over the top. serve warm.

done looks like: pale gold, like a shortbread cookie. matte, not shiny. any real brown at all means they've gone too far. they keep cooking on the counter, so when in doubt pull them early.

do the rolls need to thaw first?
no. freezer straight into the oven. a pan that sat out throws all the timings off and nobody on the floor will know why, so we ask teams to bake from frozen every time.
how long do they take?
about 20 minutes freezer to counter. roughly 7 minutes with the lid on, 4 to 6 with the lid off, then a 5 minute rest before icing.
what temperature?
325°F convection with the fan on, which covers most cafe ovens, or 350°F in a regular oven with no fan. wait five minutes after the oven beeps. a cold start is the number one reason these come out wrong.
does my staff need baking experience?
no. they arrive already baked most of the way, so the on-site step is finishing, not baking. every case ships with a wall card for the oven and we walk your team through the first bake in person.
can we bake just a couple?
bake the whole pan, then ice only what you're selling. un-iced rolls hold much better than iced ones, so that's the lever for a slow day.
what if a bake comes out wrong?
call us. dry usually means too long or too hot, so try two minutes less before changing anything else. a middle that isn't gooey usually means the first frosting sleeve went on too late, since it has to hit them while they're screaming hot.
